Try This Recipe: Lions Mane Mushroom Risotto
- 1/2 cup Arborio rice
- 1 small onion, diced
- 1 garlic clove, minced
- 1/2 cup white wine
- 2 cups vegetable broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 1/2 cup diced lions mane mushrooms
- 2 tablespoons chopped fresh parsley
- Salt and pepper, to taste
- In a large saucepan, heat 1 tablespoon of butter over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the Arborio rice and stir to coat it in the butter and onion mixture.
