Try This Recipe: Lions Mane Mushroom Risotto

Ingredients:

  • 1/2 cup Arborio rice
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1/2 cup white wine
  • 2 cups vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1/2 cup diced lions mane mushrooms
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper, to taste

Instructions:

  1. In a large saucepan, heat 1 tablespoon of butter over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  2. Add the Arborio rice and stir to coat it in the butter and onion mixture.
  3. Add the white wine and cook until it is absorbed by the rice, about 2 minutes.
  4. Add the vegetable broth, 1/2 cup at a time, stirring constantly until the broth is absorbed before adding more. This should take about 20-25 minutes.
  5. While the risotto is cooking, heat the remaining 1 tablespoon of butter in a separate pan over medium heat. Add the lions mane mushrooms and cook until they are tender, about 5-7 minutes.
  6. Once the risotto is cooked, stir in the Parmesan cheese, cooked lions mane mushrooms, and parsley. Season with salt and pepper to taste.
  7. Serve the risotto hot, garnished with additional parsley if desired. Enjoy!
